I tried a new recipe the other night. It turned out to be a big hit. I took chicken and oven fried it with panko. This was the first time I had used panko. The crunch is awesome, but I will need to season it a little better next time. I think I will mix italian seasoning with the panko in the future. When that was done, I added some pesto and cheese to the top and placed it under the broiler to melt the cheese. I served it on a pasta/pesto mixture. It was really easy because I used bottled pesto. It is something we will make again at our house.
